MY-OH-MY - Frito Pie!

Recipe from Special Diet for Special Kids Two by Lisa Lewis, Ph.D.

Frito Pie

1 lb lean ground beef
1 onion chopped fine
1 clove garlic
1 28oz can tomatoes (I used diced)
1 tsp chili powder
1 tsp ground cumin
1 tsp salt
1 19oz can refried beans (preferably fat free)
2 cups Fritos Corn Chips (or other brand, preferably additive free)
1 cup GFCF "cheese," shredded (optional)

Preheat oven to 350 degrees.

Cook the beef in a skillet, and add the onions and garlic once some fat has been released into the pan. Cook until the meat loses its pink color, and the onions are getting soft. Drain excess fat and then add the tomatoes (with juice) and the seasonings. Simmer for about 30 minutes, and then stir in the refried beans and mix thoroughly.

Cover the bottom of a 9x13 baking pan with one cup of chips. Cover with chili and GFCF cheese if desired. Use remaining chips for the top. Bake for 20 minutes.
