White Chicken Chili

Now that we have removed gluten and casein, I think we have found another allergy that Daniel has and we are eliminating things to see if tomatoes is really the cause of the slight rash he has on his chest and legs. It was cold on Sunday and I wanted to make a big pot of chili, but it has tomatoes... so I came up with a different kind of chili instead!

White Chicken Chili

4 chicken breasts, cooked and cubed
1 box chicken broth
2 cups water
3-4 potatoes, cut into small cubes
1 onion, diced
3 celery stalks, diced
1 green pepper, diced
1 can green chiles (optional)
Cilantro (optional)
2 cans White Beans

Season to taste with Garlic Salt, Onion Salt, Cumin, Pepper, etc.

Put all the ingredients in a big pot and simmer for approximately 30 minutes or until the potatoes are soft.

Serve with Chips, black olives, tofutti gfcf sour cream, hot sauce. Could even try some vegan gfcf cheese on it too!
