Quick & Easy Spaghetti

Olive Oil
1-2 small zucchini - sliced and halved or quartered
1 small yellow squash - sliced and halved or quartered
1 green pepper, diced
1 onion, diced
2 packages Shelton's Turkey Italian Sausage, cooked and sliced
1 jar Newman's Own Organic Tomato Basil Pasta Sauce
1 can S&W Organic Tomato Sauce
1 can S&W Organic Fire Roasted Tomatoes
Basil, Oregano, Garlic Salt, Onion Powder, Pepper to taste.
Brown Rice Pasta - we use Tinkyada and the kids can't tell the difference.

You can also add sliced carrots, mushrooms, or anything else you would like to hide in the spaghetti. You could go as far as to cook the veggies and throw them in the food processor to puree them and add them to the sauce - the kids would never know. My kids are used to having these veggies in their spaghetti sauce and honestly don't even taste them, but I know some kids have veggie radar and can see them a mile away!

Note: Shelton's Turkey Italian Sausage take approx 30 minutes to cook, so plan ahead.

Saute the veggies in some olive oil until they are cooked, add the sauces, tomatoes, and spices and simmer for 10 minutes. Serve over Pasta.
