Honey Roasted Sesame Pork

1 Pork Tenderloin (approx 3/4 lb)

Marinade for 1 hour or more in the following:
1/4 cup soy sauce (or wheat free tamari)
2 cloves garlic, minced
1 piece of ginger root (2 inches), sliced thin

Drain tenderloin and roll in 1/4 cup honey, then roll in 1 cup toasted sesame seeds. Since my husband hates it when I dirty excess dishes, I just put the pork loins in the pan it was going to be cooked in, drizzled honey over them, sprinkled sesame seeds on them and then flipped them over and did the same. Bake in oven at 400 degrees for 20 minutes or until no longer pink. Let stand for 5 minutes and slice on the diagonal.

Serves 2-4

You can put 2 or 3 tenderloins in the marinade to serve more.
