New Stroganoff with Mimic Creme

I am trying to limit the soy in the family's diet as well and after discovering a wonderful cream substitute, I decided to give it a try in Stroganoff. It turned out great!

1 Tbsp Olive Oil
1 onion chopped
1 green pepper chopped
10-12 mushrooms, sliced
2 cloves garlic
1 lb ground beef or buffalo
1 to 1 1/2 cups Mimic Creme
1 Tbsp Tapioca or Potato Starch
garlic salt, pepper, onion powder to taste
1 bag brown rice pasta, cooked

Saute the onion, green pepper, mushrooms & garlic in olive oil. Add ground beef and cook until done. Add Mimic Creme tapioca/potato starch and seasonings and stir over low heat until thickened. Serve over brown rice pasta.

Sometimes I add cooked green beans to make sure they get more veggies.
