Sesame Asparagus

Thanks to good old Betty Crocker... we had an old favorite tonight.

Sesame Asparagus

3/4 lb asparagus spears
1 Tblsp margarine or butter (or butter sub)
1 Tblsp sesame seeds
1 cup sliced fresh mushrooms (I used Baby Bellas)
1 tsp lemon juice
1/4 tsp sesame oil

Snap off and discard woody bases from fresh asparagus. Cut into 1 inch pieces. Cook, covered, in a small amount of boiling water for 6-8 minutes or till crisp-tender. (I fill it with water to just cover them in the pot.) Drain; remove asparagus from pot.

In the same pot, melt margarine; add sesame seeds. Cook and stir for 2-3 mins or till toasted. Add mushrooms; cook and stir until tender. Add lemon juice and sesame oil. Add asparagus; toss to coat. Heat through. Serves 4.

Note on the butter sub... I absolutely love the new "soy-free" version of the earth balance buttery spread - it totally rocks!

Speaking of Betty Crocker... My dad told my youngest son this joke last weekend:
Papa: Did you hear Betty Crocker is in the hospital?
Andrew: No, what happened?
Papa: She burnt her buns!

That joke is probably older than my dad! Andrew got it and started laughing hysterically. Ah... Life with boys! I wouldn't trade it for the world!
