We are having a family picnic tomorrow and since my son's recent list of food allergies has increased, I was searching for a dessert that is gluten-free, dairy-free, soy-free, egg-free, and sugar-free. Many of my friends on the gfcf yahoo group suggested a cobbler or crisp and so here is what I found...
I started with the recipe from the following blog:

Then made a few substitutions...
- Instead of light brown sugar, I used 1/4 cup of xylitol
- For the baking mix I used Bob's Red Mill Baking & Biscuit Mix
- For the vegan buttery spread I used Earth Balance Soy-free
I basically doubled the recipe for a 9x13 pan and used extra peaches cause I wanted to. The only ingredient I did not double was the shortening/butter spread when making the topping.
My husband thinks we should eat this one at home and try again... yeah right! I think he just wants to have it all to himself to eat because peaches are his favorite!
