Chocolate Cake & Frosting

Lisa Ackerman's Chocolate Cake
1 cup white rice flour
1/2 cup sorghum flour
1 cup sugar
1/2 cup cocoa powder
1/2 tsp salt
1 tsp baking soda
1 tsp zanthan gum
1/2 cup oil
1/2 cup milk substitute
1/2 cup hot water
2 tsp vanilla (gf)

Preheat ove to 350 degrees.

Mix together dry ingredients and stir to combine. Then add liquid ingredients and stir until well mixed.

Pour batter into a greased and floured 8x8 cake pan. Bake for 30 minutes or until the cake tests done with a toothpick. (Bake 2025 minutes for cupcakes.)

Chocolate Frosting


1/4 cup gfcf margarine, softened
1/3 cup cocoa powder
1 tsp vanilla (gf)
2 cups confectioner's sugar
4 Tbsp water

Beat margarine until fluffy, and then lower mixer speed and beat in cocoa and vanilla. Gradually beat in sugar, alternating with water, until desired thickness is acheived.
