I tried this recipe tonight... it has some sneaky vegetables! My oldest son didn't even notice the carrots and snarfed it down in record time - he is not normally a fan of metaloaf! My youngest son saw the carrots right away and eventhough he likes carrots, he didn't want to eat it until we smothered it in ketchup. Then he had second helpings! It was pretty easy to make - I shredded the zucchinni and carrots, instead of trying to chop them and substituted GFCF pretzel crumbs for the bread crumbs, but it turned out good! I think we will be making this one again.
